What this is for
Writing a Markdown table by hand means counting pipes and keeping a separator row in step with the column count. Every later edit means doing it again. A grid removes the whole class of mistake.
The other half is pasting. Numbers almost always come from a spreadsheet, and a spreadsheet puts tab-separated text on the clipboard - so pasting into the first cell fills the whole grid.
